Come diventare un tostatore

Si può diventare tostatore di caffè senza laurea: conta capire la tecnologia di tostatura, saper usare la tostatrice e controllare temperatura e tempo. Poiché si lavora con un prodotto alimentare, serve l'attestato HACCP (formazione alimentarista).

1. Corso breve di tostatura

I corsi base di tostatura del caffè durano da pochi giorni a qualche settimana. Insegnano i profili di tostatura, l'uso della tostatrice, la valutazione dei chicchi e l'assaggio (cupping). È il modo più rapido per entrare nel mestiere.

2. Formazione sul posto in torrefazione

Molte torrefazioni e aziende del caffè assumono persone senza esperienza e le formano in produzione affiancandole a un tostatore esperto. Acquisisci subito competenze pratiche e prendi l'attestato HACCP.

3. Tirocinio in torrefazione

Un tirocinio ti permette di imparare ogni fase del lavoro nella pratica, dall'accettazione del caffè verde al confezionamento. È una buona opzione per chi vuole imparare gradualmente senza esperienza pregressa.
